The Matcha
Kit is a boxed set complete with all you need to prepare Matcha. It
includes 30 grams of delicious organic Matcha, a video and DVD that
shows how to make Matcha and shares its history and health benefits.
A handcrafted earthenware, lead free glazed bowl is included, as
well as a handcrafted untreated bamboo tea whisk and a handcrafted
untreated bamboo tea scoop.
Use care when washing the earthenware tea bowl in a dishwasher to
prevent chipping. Gently hand wash the tea whisk then allow to air
dry. Towel drying may cause the delicate tea whisk to break. Simply
wipe the tea scoop with a dry cloth or paper towel. Do not place
whisk or spoon in a dishwasher.
Organic Matcha is the finest
ceremonial grade powdered green tea. Beginning in
ancient China, it grew into a traditional ceremonial beverage loved
by the Japanese for centuries.
The flavor of tea reflects the soil
it is grown in, the season picked, and the curing process. Our tea
is tended adhering to strict organic practices. The growers are
dedicated to organic farming and stewardship of the soil. This
dedication is reflected in the use of skillfully executed
traditional handling methods that preserves and enhances the tea's
flavor and nutrients resulting in exceedingly fine organic tea.
Matcha is hand harvested in April
from organically grown tea bushes Camellia sinensis when the
leaves are most tender. Steaming the leaves prevents oxidation and
ensures a bright green. The stems, twigs and veins are removed from
the leaves, then cutting, winnowing and drying prepares them for one
of the 1,400 small granite stone mills. For optimum flavor and
efficacy it takes about one hour per mill set to make thirty grams
of this organic matcha. After grinding, the matcha is packaged in
small, 30 gram (1 ounce), stainless steel cans. At the bottom of
each can is an anti-oxidant protector, called an oxygen absorber.
The absorber is sealed to the bottom of the can, and contact with
the matcha is prevented by an FDA approved, food grade polypropylene
plastic covering. The oxygen absorber helps to protect matcha’s
powerful antioxidants by absorbing oxygen, once the container is
opened and the matcha is exposed to air. Exposure to oxygen causes
the antioxidants in matcha to gradually oxidize, lessening, and
gradually destroying one of the most important reasons for drinking
matcha – it’s health protective antioxidants. The oxygen absorber
keeps the powdered matcha bright green. Matcha that has lost its
antioxidants is a pale yellow-green color. Deep flavor, fragrant
aroma and brilliant color distinguish Organic Matcha. The Aiya

Worldwide research points to green
tea’s powerful antioxidants, polyphenols, for its healthful
properties. Epigallo-catechin gallate (EGCG: also an antibiotic) is
the most prominent of these. Together with tannins and flavonoids
they are collectively called ‘catechins’ and account for about 40%
of its dry weight.
Unlike brewed teas that are steeped
and discarded, with Matcha the whole leaf is consumed, completely
whisked into warm water. It is green tea concentrate.
Because of the caffeine in Matcha
(less than in coffee), it is an adult drink not recommended for
children. Green tea contains more beneficial astringent tannins than
other tea. They are preserved by steaming the leaves keeping them
green. Researchers tell us the caffeine activates the tannins, while
the tannins counterbalance the caffeine.
