Grass-Fed Traditions currently supplies 100% grass-fed beef from small-scale family farms in Wisconsin. Our cows are all grass-fed Angus and Galloway (mostly Galloway). How do we define "grass-fed?" The source of Omega 3 is the green leaves of plants. When cattle eat their natural diet, beef becomes a great source of Omega 3. Grain is not a rich source of Omega 3, so standard, cattle-finishing practices cause the Omega 3 level to decrease dramatically.

Galloway Cattle
Galloway cattle are an ancient breed that originated in the rugged hill country of southwestern Scotland. They are related to the Angus which was developed in northeastern Scotland. While the Angus was selected for rapid growth on better feed, the Galloway was selected for its ability to thrive on poor forage in a cold wet climate. They were first imported to the states in the 1850s. They are still rare in North America, and worldwide only number about 10,000. Their popularity is now increasing with the renewed interest in grass-fed and grass-finished beef.

The Galloway, unrivaled as a grazing breed, utilizes coarse grasses frequently shunned by other breeds. They have the ability to produce a high quality beef product directly from grass. Due to the breed's naturally dense, insulating coat the Galloway does not layer on excessive outside fat. Results of a multi-breed research project conducted by a Canadian Government Experiment Station, reveal that the Galloway ranks second only to the Buffalo in hair density tests. The robust, hardy nature of the Galloway is especially suited for northern harsh climates. The claim that Galloway beef is juicy, tender, and flavorful is substantiated in recent USDA tests of Galloway crossbreds, when compared with eleven other breeds. Results of the Cycle IV Germ Plasm Evaluation (GPE) Program at the USDA Meat Animal Research Center (MARC), Clay Center, Nebraska, showed the Galloway crosses placing at the top of the chart for flavor, juiciness and tenderness.

What makes Tropical Traditions Pastured Poultry different from other chickens?

1. Tropical Traditions Pastured Poultry are raised outdoors on pasture.
Commercially produced chickens are raised entirely indoors with tens of thousands of other chickens in close quarters. They typically never see the sun or pasture. Organic or "Free Range" chickens also have no standard definition or industry guidelines for how long chickens must be outdoors on pasture, leaving the consumer very confused. The USDA definition of "free-range" is rather vague. In order to label their meat and poultry "free-range or free-roaming", "Producers must demonstrate to the Agency that the poultry has been allowed access to the outside." (1) No mention of vegetation (pasture) is made. Poultry producers themselves seem to have no common standards on what the term means. Some producers interpret "access to the outside" as a small pop-door (chicken door) on an end-wall of a 100 ft. long shed filled with un-caged birds moving about freely on a litter-covered floor. Others feel they are compliant with the spirit of free-range if their birds are outside in the open air and under the sun; even if their "range" is simply bare dirt.

When it comes to the consumer's perception of "free-range", arguably the vision that "free-range" most often conjures is of a bird happily hunting and pecking in the grass in an open field. Because of the wholesomeness associated with the term "organic," many consumers take for granted that all certified organic poultry raised for meat and eggs are raised outside on green pasture. Sadly, this is not so. The term "free-range" is not even listed in the NOP (National Organic Program) "terms defined."(2) They do give guidelines that say: "All organically raised animals must have access to the outdoors..."(3) So when someone purchases poultry products labeled "free range" or "organic," the birds may never have actually seen the light of day or green grass its entire life. Technically, they simply have to have a door out of their confinement, but they don't have to necessarily walk through that door to meet the requirements.

2. Tropical Traditions pastured poultry are fed Cocofeed which contains no soy.
Cocofeed is an organic chicken-feed ration developed by Tropical Traditions that contains coconut pulp as well as other high-quality natural ingredients. The coconut pulp is the residue left over after coconut oil has been extracted from the coconut meat. Cocofeed contains NO soy.

In tropical cultures, coconut has been a traditional ingredient in chicken feed for hundreds, if not thousands of years. The coconut pulp residue left over after coconut oil was extracted from the coconut meat is still a common animal feed component today in places where coconuts grow. This coconut pulp is high in fiber and protein. Mechanically extracted coconut pulp was also approved by the FDA as an animal feed and listed in the AAFCO (Association of American Feed Control Officials, Official Publication) as early as 1955. While coconut cannot supply ALL the nutritional needs of chickens, there are multitudes of studies that have been done in the Philippines and elsewhere showing how coconut pulp can be a major component of chicken feeds when combined with other quality ingredients. Some of these studies are more than 50 years old.

In more recent history, with the development of fast-growing "broiler" factory chickens, soy has become a key ingredient in chicken feeds for the purpose of supplying a high concentration of protein to promote fast growth. It is very difficult to find a chicken in the US market today that has not been fed high soy-based feeds. Even chickens advertised as "organic" or "free range" are almost always fed an organic mixture high in soybeans.

Independent laboratory tests have shown that Tropical Traditions pastured poultry chickens raised on Cocofeed contain lauric acid, which is also found in coconut oil and human breast milk.

3. Tropical Traditions pastured poultry are raised by family farmers.
Tropical Traditions Pastured Poultry chickens are all raised by family farmers. These farmers run diversified farms practicing sustainable agriculture. They will rotate tracts of land with crops and other animals, or let it go fallow from time to time. When a batch of chickens is raised on a piece of pasture, typically that pasture will not see chickens again for two or more years. In the interval, crops may be grown in that pasture, or it may go fallow allowing grass to grow, die, and decompose so that the soil is kept in balance and not contaminated from too much chicken manure. Grass-Fed Traditions currently supplies 100% grass-fed beef from small-scale family farms in Wisconsin. Our cows are all grass-fed Angus and Galloway (mostly Galloway). How do we define "grass-fed?" The cows are on pasture, not in feed lots eating silage. They are also finished on grass, and do not eat grains at all. We don't process animals in the Winter or early Spring, when they are only eating dry grass. Our animals are eating green grass right up to the time of processing, and are dry aged before packaging. Many sources of "grass-fed" beef today are simply from cows in feedlots eating silage year round.

The CLA Advantage
Conjugated Linoleic Acid (CLA) is a naturally occurring free fatty acid found mainly in meat and dairy products in small amounts. CLA was discovered by accident in 1978 by Michael W. Pariza at the University of Wisconsin while looking for mutagen formations in meat during cooking. The most abundant source of natural CLA is the meat and dairy products of grass-fed animals. Research conducted since 1999 shows that grazing animals have from 3-5 times more CLA than animals fattened on grain in a feedlot. Simply switching from grain-fed to grass-fed products can greatly increase your intake of CLA. (Dhiman, T. R., G. R. Anand, et al. (1999). "Conjugated linoleic acid content of milk from cows fed different diets." J Dairy Sci 82(10): 2146-56.)

Omega 3's
Omega 3 is an essential fatty acid for human growth and development. We must have it to be healthy. Grass-finished beef is a great source for this essential nutrient. The source of Omega 3 is the green leaves of plants. When cattle eat their natural diet, beef becomes a great source of Omega 3. Grain is not a rich source of Omega 3, so standard, cattle-finishing practices cause the Omega 3 level to decrease dramatically.

Galloway Cattle
Galloway cattle are an ancient breed that originated in the rugged hill country of southwestern Scotland. They are related to the Angus which was developed in northeastern Scotland. While the Angus was selected for rapid growth on better feed, the Galloway was selected for its ability to thrive on poor forage in a cold wet climate. They were first imported to the states in the 1850s. They are still rare in North America, and worldwide only number about 10,000. Their popularity is now increasing with the renewed interest in grass-fed and grass-finished beef.

The Galloway, unrivaled as a grazing breed, utilizes coarse grasses frequently shunned by other breeds. They have the ability to produce a high quality beef product directly from grass. Due to the breed's naturally dense, insulating coat the Galloway does not layer on excessive outside fat. Results of a multi-breed research project conducted by a Canadian Government Experiment Station, reveal that the Galloway ranks second only to the Buffalo in hair density tests. The robust, hardy nature of the Galloway is especially suited for northern harsh climates. The claim that Galloway beef is juicy, tender, and flavorful is substantiated in recent USDA tests of Galloway crossbreds, when compared with eleven other breeds. Results of the Cycle IV Germ Plasm Evaluation (GPE) Program at the USDA Meat Animal Research Center (MARC), Clay Center, Nebraska, showed the Galloway crosses placing at the top of the chart for flavor, juiciness and tenderness.

The papaya fruit is harvested before it reaches maturity, when enzyme activity is at its highest level, and the fruit is a strong fibrous green. Filipinos often eat unripe green papaya as a vegetable, since sugar content is low in its unripe state. The cows are on pasture, not in feed lots eating silage. They are also finished on grass, and do not eat grains at all. We don't process animals in the Winter or early Spring, when they are only eating dry grass. Our animals are eating green grass right up to the time of processing, and are dry aged before packaging. The CLA Advantage

While most of the atchara available in the Philippines is made with distilled vinegar, Tropical Traditions decided to develop its own raw vinegar which is fermented from coconut water - the water inside coconuts. We used the water from the same certified coconuts used to make our Virgin Coconut Oil. After several years of research, we successfully fermented our organic coconut water into a healthy vinegar rich in all the minerals available in coconut water, and stable enough to keep it raw with the mother of vinegar present. This is truly a raw and "live" food that has NOT been pasteurized. The organic ingredients are listed below. The High Quality Ingredients Used in Tropical Traditions Atchara

Green Papaya
We start with certified organic unripe green papaya grown by small-scale family farmers in the Philippines. We carefully select the wild variety of "native papaya." Japanese researchers have found that the native Philippine papaya can contain up to four times the amount of papain (a plant-based digestive enzyme) than imported varieties of papaya in the Philippines. The papaya fruit is harvested before it reaches maturity, when enzyme activity is at its highest level, and the fruit is a strong fibrous green. Filipinos often eat unripe green papaya as a vegetable, since sugar content is low in its unripe state. The digestive enzyme papain which is found in papaya has long been used as a plant-based digestive aid in enzyme supplements. Green papaya is also very high in antioxidants. Eating Tropical Traditions Atchara is the best way to eat raw green papaya short of traveling to the tropics and eating it right off the tree. The raw coconut water vinegar preserves the organic raw papaya, as well as the other raw ingredients.

Organic Raw Coconut Water Vinegar
The water inside the coconut shell is packed with nutrients that nourishes the nut as it prepares to germinate and start growing into a new coconut tree, which is exactly what would happen if you let a coconut fall from the tree to the ground and leave it there, given the proper moisture and soil conditions. Coconut water is high in many vitamins and minerals, especially potassium. Because it contains electrolytes, it is considered one of the best natural rehydrating drinks in the tropics. Pasteurized coconut water retains most of the minerals, and is frequently sold as a sports drink. Since fresh coconut water deteriorates so quickly once it is exposed to air, it is best obtained and consumed in the tropics where it can be purchased fresh, with all the nutrients and enzymes in tact. Packaged coconut waters must be pasteurized, destroying some of the nutrients. It has been reported that during World War II coconut water was used in emergencies as IV fluids, since the nutrient-packed water is completely sterile inside the coconut until the hard shell is cracked and it is exposed to air.

We use only certified organic Muscabado whole cane sugar, grown by a cooperative of small scale family farmers in the Philippines. The sugar is also Fair Trade certified. Muscabado sugar is a whole sugar that is extracted from the sugar cane using traditional methods. It contains all the natural nutrients found in raw sugar cane or molasses. Sugar is needed in the fermentation process, and most other atcharas are made with refined white sugar, and the atchara is green in color due to the color of the papaya. Our Muscabado whole cane sugar is a deep brown in color, which gives a brown coloring to Tropical Traditions Atchara. The sugar is needed in the fermentation process, and much of it is used up during fermentation. Atchara is not sweet at all.

Organic Raw Ginger Root
Ginger is another ingredient in atchara that is known for aiding digestion. It grows well in tropical climates, and is a popular seasoning herb in many Philippine dishes, mostly cooked. As an ingredient in atchara, it is added raw and is enhanced through fermentation in the raw vinegar. Our source of ginger comes from the remote areas of Mt. Banahaw in the Philippines, far away from large cities and pollution. It is the same area where most of our Virgin Coconut Oil is produced, and the ginger is grown by small-scale family farms.

Native Tagalog Garlic
The native Philippine Tagalog garlic is much smaller than imported garlic, and prized as a much more potent and stronger garlic than larger imported varieties. We use only Tagalog garlic in Tropical Traditions Atchara, and our small-scale family farmers raising this garlic are in the process of becoming certified organic. Garlic has traditionally been known as an immune supporting herb with remarkable nutritional qualities. The Tagalog garlic is known in Asia as one of the most potent native varieties.

Tropical Traditions Organic Coconut Water Vinegar is truly unique and is the first of its kind in the US market! Most vinegars are clear because they are distilled and originally made from white sugar. Our Organic Coconut Water Vinegar is not distilled, but raw. It contains the mother of vinegar. In the Philippines most all commercial vinegars are distilled, and the "coconut vinegars" are not made from the nutrient-packed coconut water from inside the coconut, but from the sap of the coconut tree which is used to make lambanog, an alcoholic drink similar to vodka. These "coconut vinegars" are by-products of the lambanog industry. To make these products, one must harvest the sap of the coconut tree from the coconut flower bud, which would normally become a fruit-bearing coconut. Hence, trees dedicated to harvesting the sap for lambanog and the more common coconut vinegar will never produce coconuts. Tropical Traditions does NOT support coconut products that prevent coconut trees from bearing fruit (this would include "coconut sugar" harvested from the flowering bud of the coconut tree.)
