EDEN Aduki Beans (Paseolus angularis) are organically grown in nutrient rich vital soil on family farms committed to a clean environment and the most nutritious, life encouraging food. The beans are soaked overnight and cooked with purified water and a bit of kombu sea vegetable that softens and brings out their flavor. No salt added.

EDEN Aduki Beans are a compact red bean, rich in color with pleasing texture and flavor. They adapt to a wide variety of ethnic styles, are great for red beans and rice and perfectly complement quinoa. Aduki beans are one of Japan's most popular beans where they are known as azuki. In 1974, Eden's president traveled to Asia and purchased a shipment of these small red beans at the direction of Noburo Muramoto. Shipped down the St. Lawrence River, half of the load was dropped in Toronto and half at Detroit. These beans were used as seed for our growers and initiated the commercial cultivation of aduki beans in this hemisphere.

EDEN Beans have twice received the highest ranking in comparisons of brands by Nutrition Action Healthletter, most recently in 1999. Every flavor of EDEN beans was recognized as having superior nutrition including high fiber and low sodium. EDEN Beans are the most delicious and nourishing because they're grown in living soil free of pesticides, herbicides and chemical fertilizers for decades. These organically grown beans are Nature's perfect food. Commercial canners put chemicals in with beans to harden the skins so that they won’t fall apart in the can as they cook. They also add a chemical to hold the color. Our organic beans come out perfect with none of these additives. Because of the vital soil that produces them, their much higher mineral content and stronger skins allow them to be cooked without need of processing chemicals, and their vibrant colors hold fast. Our cannery, Meridian Foods located in East central Indiana has a long standing reputation for putting out cooked canned beans of a better quality, fill and finish than any other cannery in the United States.

EDEN Aduki Beans are a good source of high quality vegetable protein, with no fat. They are rich in dietary fiber, both soluble and insoluble, shown to help lower LDL ('bad') cholesterol, regulate blood sugar and help the body eliminate toxins while nourishing. They are also a good source of iron, phosphorus and magnesium, and provide potassium, calcium, zinc and important B vitamins (B1, B2, B3) shown to lower the risk of heart disease and birth defects, promote healthy cells and reduce stress.

Beans are an important source of two essential amino acids not found in cereals, lysine and threonine. Whole grains complement beans and together deliver complete protein. A variety of beans in combination with whole grain is a good step toward healthy living.
