High quality, well cooked organic beans...is there any
better food? “Beans are probably the best human plant food there is,” Dr.
George L. Hosfield, the leading researcher and plant breeder at Michigan
State University, told Reuters
Health. He explained that beans are
full of protein and fiber. They also contain important vitamins and minerals
such as folic acid, iron, potassium and zinc.
Differences of Vital Soil
Beans clearly reflect the soil they are grown in. Huge
differences in vitamin and mineral content are seen when comparing beans
grown in vital organic soil with those grown the chemical, commercially way,
or even to some grown only to meet the requirements for an ‘organic’ label.

When Eden first delivered organic beans to the cannery
they were told that it was essential to put chemicals in with them to harden
the skins so that they wouldn’t fall apart in the can as they cooked,
another chemical was needed to hold the color. This was NOT acceptable to
them, so a first run was tried with just beans and pure water. To the
surprise of the cannery the organic beans came out perfect. Due to the vital
soil that produced them, their much higher mineral content and stronger
skins allowed them to be cooked without the need of processing chemicals,
and their vibrant colors held fast.
Also, Eden Organic Beans
are packed in steel cans coated with a baked on oleoresinous c-enamel
that does not contain the endocrine disrupter chemical, bisphenol-A
(BPA). Oleoresin is a natural mixture of an oil and a resin extracted
from various plants, such as pine or balsam fir. These cans cost 14%
more than the industry standard cans that do contain BPA. The can maker,
Ball Corporation, tells us that Eden is the only U.S. food maker to date
to use these BPA free cans and we have been since April 1999.
