Popcorn’s unique ability to pop lies in the fact that the kernels
contain a certain amount of water that is stored in the soft starchy
endosperm inside the hard outer shell or ‘pericarp’ of the kernel. When
the corn is heated the water expands creating pressure within the
kernel. Eventually the casing cracks and the kernels explode and pop
allowing the water to escape as steam and turning the kernels inside
out. Organic Popcorn comes in a resealable package to better retain
moisture. After resealing the package, refrigerate to further ensure
freshness.
